Chana Pulao (Indian Chickpea Rice)

Step by StepJump to Recipe

Chana pulao is a one-pot spiced, fragrant and delish chickpea rice or chickpea pilaf made with fragrant basmati rice, melt in the mouth white chickpeas (garbanzo beans), sharp onions, tangy tomatoes, healthy herbs and bold spices. This Indian chickpea rice makes for a filling, comforting and satisfying meal accompanied with a side of vegetable salad, yogurt dip or raita or plain yogurt.

chana pulao served on a white plate with spinach raita.

This is one of those recipes that was made once in a while at my home while growing up. During my college days, we had a Hyderabadi aunty as our neighbor who would make fabulous pulao and biryani. The rice was always cooked to perfection and the taste of her pulao and biryani were just heavenly. I still do remember her chana pulao and it used to be awesome.

Well, while writing this post I do remember the aroma and taste of her chickpea rice dish. Another rice recipe you can make with chickpeas is this Chana Biryani – where layers are made of chickpea gravy and basmati rice which is then further dum cooked.

For the chana pulao obviously, you have to first cook the chickpeas (safed chana or kabuli chana in Hindi) if using dried chickpeas. However, If you have leftover boiled chickpeas or canned chickpeas the recipe comes together quickly.

This chickpea rice has to be made with basmati rice and ghee (clarified butter) or else something will be a little amiss if you do not use basmati rice and ghee. This is a simple and easy pilaf to make but loaded with flavors.

This chole pulao can be served with any raita and a side salad. I served it with spinach raita and an Indian salad of onion-tomato called as kachumber.

Step-by-Step Guide

How to make Chana Pulao

1. Rinse ¾ cup white chickpeas (garbanzo beans or chole or chana) a couple of times in water. Then soak them in a bowl covering with enough water overnight or for 8 to 9 hours.

If using canned chickpeas or leftover boiled chickpeas then jump to step 6 and follow the recipe from there. For canned or leftover cooked chickpeas you will need about 2.25 cups of them.

rinsing chickpeas in fresh water and then soaked overnight in water

2. Drain all the water. Rinse the chickpeas with fresh water. Then add the soaked chickpeas to a 3 liter pressure cooker. Also, add about ½ teaspoon of salt.

You can also cook the chickpeas in the Instant pot or in a pan on the stovetop adding water as needed.

3. Add 3 to 3.5 cups of water to the pressure cooker.

4. Pressure cook on medium to medium-high heat for 12 to 14 whistles or for about 20 minutes or till the chickpeas, are tender and softened very well.

Some chickpeas will take a longer time to cook. If the chickpeas are aged then note that they will take more time to cook.

When the pressure falls down on its own in the cooker then only open the lid. Check if the chickpeas are cooked well.

5. Drain the water from the cooked chickpeas and set aside.

6. Rinse 1 cup heaped basmati rice very well in water till the water runs clear of starch. Then soak the rice in enough water for 20 to 30 minutes. Later drain all the water and set the rice aside.
