How to make Paneer Bhurji Sandwich

Preparation

1. Keep all the ingredients ready for making paneer bhurji.

2. Crumble 200 grams of paneer and set aside.

Sauté Onions

3. Heat 1½ tablespoons butter or oil in a pan.

4. Once the butter melts or the oil becomes hot, add ½ teaspoon cumin seeds.

5. Lower the heat and sauté cumin seeds until they crackle.

6. Now, add 2 teaspoons finely chopped ginger.

7. Sauté the ginger on low heat for a minute or until the raw aroma of ginger disappears.

8. Add ⅓ cup chopped onions and 1 to 2 finely chopped green chilies.

9. Sauté until the onions turn translucent and are softened.

Sauté Tomatoes

12. Now, add ½ cup finely chopped tomatoes.

13. Stir and sauté for a minute.

14. Add ¼ teaspoon turmeric powder, ½ teaspoon red chili powder and ¼ teaspoon garam masala powder.

15. Mix well.

16. Sauté the onion-tomato masala on low to medium heat for 2 to 3 minutes or until the tomatoes soften.

Add Paneer

17. Then, add the crumbled paneer.

18. Stir and mix well. Cook on low heat for about 1 minute.

Ensure you don’t overcook the paneer as it becomes dense and rubbery, if cooked for a longer time.

19. Turn off the heat.

20. Add 1 tablespoon chopped coriander leaves and mix well.

21. Remove the paneer bhurji in a bowl and set aside. Allow it to cool or become warm at room temperature.

Assemble

22. Slice the edges of the bread if you prefer.

You can use any bread of your choice like White Bread or Brown Bread or Wheat Bread or Sandwich Bread.

23. Apply a generous amount of butter on the bread slices.

24. Add a spoonful of prepared paneer bhurji on the buttered bread slices. Spread the mixture evenly on all sides with the help of a spatula or back of a spoon.

At this point you could also add some thinly sliced onion, capsicum, cucumber or tomato if you like.

25. Cover with another slice of bread.

Toast Paneer Bhurji Sandwich

26. Place the sandwiches in a preheated toaster or grill.

27. Toast for 2 to 3 minutes or until they look golden brown and crisp. Similarly, toast or grill the rest of sandwiches.

Ingredients

For paneer bhurji

  • 200 grams Paneer – crumbled (Indian cottage cheese)
  • 1.5 tablespoons Butter – or use oil or ghee
  • cup onions – finely chopped or 1 medium-sized
  • ½ cup tomatoes finely chopped or 2 medium sized tomatoes
  • 1 to 2 green chilies – chopped finely
  • 2 teaspoons ginger – finely chopped
  • ¼ teaspoon turmeric powder
  • ¼ to ½ teaspoon red chili powder
  • ¼ teaspoon Garam Masala
  • ½ teaspoon cumin seeds
  • 1 to 2 tablespoons coriander leaves – chopped finely
  • salt as per taste

For the sandwich

  • 8 to 10 slices whole wheat bread or white bread or brown bread
  • Butter – softened, as required

Instructions
 

Making bhurji

  • Keep all the ingredients ready for the paneer bhurji recipe.
  • Crumble the cottage cheese and set aside.
  • Heat a pan and then add 1.5 tablespoon of butter or oil in it. Let the butter melt or let the oil become hot.
  • Next add cumin seeds. Sauté cumin seeds on a low heat until they crackle.
  • Now add the finely chopped ginger. Sauté the ginger for a minute on low heat, until the raw aroma vanishes from the ginger.
  • Then add the chopped onions and finely chopped green chilies. Sauté until the onions soften and become translucent.
  • Sprinkle salt as per taste and stir to combine.
  • Add chopped tomatoes. Stir and sauté for a minute.
  • Next add turmeric powder, red chili powder and garam masala powder. Mix well.
  • Saute the tomatoes for 2 to 3 mins, until the tomatoes soften.
  • Then add the crumbled paneer. Stir and mix thoroughly.
  • Cook for 1 minute on low heat.
  • Turn off the heat and add 1 to 2 tablespoons chopped coriander leaves.
  • Stir all nicely.
  • Remove the paneer bhurji in a bowl/vessel and place aside. Allow it to cool or become warm at room temperature.

Making paneer bhurji sandwich

  • Slice the edges of the bread if you prefer. Then spread generous amount of butter to the bread. Applying butter prevents the bread from becoming soggy.
  • Add a spoonful of paneer bhurji mixture on the buttered bread. Spread the mixture evenly on all sides with the help of a spatula or back of a spoon.
  • Cover with another slice of bread.
  • Place the sandwiches in a preheated toaster or grill.
  • Toast for 2 to 3 mins or until they look golden brown and crisp. Similarly toast/grill the rest of sandwiches.
  • Slice the sandwiches, apply some butter if you like over them. Serve Paneer Bhurji Sandwich with green chutney or tomato ketchup.

Notes

  1. Don’t cook the paneer for too long else they taste rubbery.
  2. Make these sandwiches with fresh paneer. The paneer should not taste sour or have an unpleasant taste or smell. 
  3. You can make adjustments to this recipe by adding your choice of spices and herbs in the bhurji.
  4. For more nutrition, include sliced veggies like tomato, cucumber, bell peppers, grated carrots, onions as toppings in the sandwiches.
  5. For a cheesy taste and flavor, you can opt to include some grated cheddar or mozzarella cheese in these paneer bhurji sandwiches.
